



Call Me Shuck!

"...We were eating alligator sausage, muffuletta, and etouffee! The guide was amazing and he answered all my questionz! Which on a foodie tour can be pretty rapid fire. But it was also all about history and the culture. Kind of amazing how much you can talk about a dish of food.
Fav by far was the charbroiled oysterz. We ate it at like three placez! Each place had a slightly different style but at one place the guy -- he was like: "Call me Schuck!" -- popped and prepped them right in front of us. Then the other guy -- he called himself "Char" -- broiled 'em right in my mouth it seemed. Oh my goosh!
The buttery garlicy explosion was so savory. I've never had anything like it. 'Melts in your mouth' doesn't do it justice. Once he got started, Shuck opened up each oyster one by one -- not speaking a word. He was very focused on his job. Stoic.
Their oysterz were beautiful just sitting in water. Then when Char gets 'em, he drops them on the griddle spraying the special sauce all over them. Each time the sauce hits, the flames jump up like a religious ceremony. Such a delicacy.
As soon as you're done with a dozen, you only want more. I'm thinking right now I should order more. I don't know if I can live without that taste. You know how Snug Harbor makes theirs? I'll have to ask..."
